- 1 pre-made pie crust (or homemade if you prefer)
- 4-5 medium-sized ripe tomatoes, sliced
- salt
- 1 tbsp olive oil
- 1/4 cup chopped green onion
- 1 tsp garlic, minced
- 6 slices bacon, cooked and crumbled
- 1 tbsp Dijon mustard
- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Freshly ground black pepper
Instructions
- Prepare the Tomatoes:Slice the tomatoes and place them on a paper towel. Sprinkle them lightly with salt and let them sit for about 30 minutes to remove excess moisture. Pat them dry with another paper towel.
- Preheat the Oven:Preheat your oven to 375°F (190°C).
- Prepare the Bacon:Cook the bacon until crispy, then crumble it into small pieces. Set aside.
- Prepare the Cheese Mixture:In a mixing bowl, combine the mozzarella, cheddar, Parmesan, mayonnaise, sour cream, fresh basil, oregano, and chives. Mix well until combined.
- Assemble the Pie:Place the pie crust in a pie dish and crimp the edges if desired. Spread the Dijon mustard evenly over the bottom of the crust. Layer the bottom with half of the sautéed onions and half of the crumbled bacon. Add a layer of tomato slices, slightly overlapping them. Sprinkle with black pepper to taste. Spread half of the cheese mixture over the tomatoes. Repeat with the remaining onions, bacon, tomatoes, and cheese mixture.
- Bake the Pie:Bake in the preheated oven for about 30-35 minutes or until the top is golden and bubbly.
- Cool and Serve:Allow the pie to cool for at least 10 minutes before slicing. Serve warm or at room temperature.
